This will be the first kind of commendation you'll receive if you're either a Sith Warrior or Sith Inquisitor. Commendations can be acquired as quest rewards or as random drops from enemies. Commendations can be traded at special vendors that sell Prototype level equipment and mods. You'll find yourself spending these commendations just before you leave the planet.

I was only able to get 7 commendations via questing on Korriban. I did every known quest available to my class. Any idea which mobs drop them? I need one more to get that nice chest piece.

Commendations will also drop. They are rare but that is what gave me the 8 I needed.

I've found that these drop (at least most frequently for me) off the last guys in the Tomb of Sadow, where you do the last quest. I've seen it off the lvl 9-10 droids, the groups of four initiates, and other lvl 9ish groups at the end. Perhaps it drops off others just as well, but I've gotten two down in that area.

I'm having a hard time grinding these. I have lvled 4 characters so far to lvl 10 just to find out which one I found to be the most entertaining one. The irony is that when I finally decided which one to play with, I don't have enough commendations. All I need is one more, then I'll be able to sleep tonight.

Can you trade these in anywhere? Perhaps for 2 for 1 for the next level/faction?

Frankenshank, you can in fact trade these in for the next tier of commendations on Dromund Kaas, and it is a 2 for 1 swap. As Nolimit mentioned, this is ideal as the one chest piece you buy from the vendor is quickly replaced.
As for not receiving the 8 needed for the item, I noticed that one or two may come from a random drop. My first play through on Korriban, I had 8, but the next run as a Warrior gave me 7. And I am a completionist, so I know I did every single quest and whatnot. Only explanation I could come up with.
