Here is a summary of Vette's likes and dislikes when it comes to Companion Gifts. My test was conducted using Rank 1, Green quality gifts purchased from the Companion Gifts Vendor on the Imperial Fleet during the US Thanksgiving Weekend Open Beta.

*I was not in a romance with Vette at a time. The affection value of this type of gift might change if you are actually "courting" her.
I should also add that my affection with Vette was well over 2500 before performing this test. I am not sure if lower ranked gifts "lose value" the more a companion already likes you. Further testing needed.

You are correct. The higher your affection value the lower the item's value in terms of affection gain. Using the perfect Rank 1 gift for Vette gives say 96 affection, gives only 12 over 3000 or so.
From what ive been able to gather from the beta, you use different ranks of gift to maintain high affection numbers. When you start seeing the same gift give lower than expected affection numbers, its time to move up to the next rank of gift. I did not have enough time to properly find out the numbers but i look forward to learning them on the 16th.
(also my screenshot i added today, shows her wearing a shock collar that i actually removed 13 levels prior but in the beta remained on her neck)
