I'm not sure whether or not you played WoW at release like I did, but this game's launch would truly put WoW's to shame. It hasn't even been 3 months yet, and Bioware already has a great line up of patches and new content bursting with promise that lay just around the corner for us. They've got plenty of content out already, too; you simply have to know where to look to find it. :)
Also, like in WoW (and most MMOs), classic dungeons and the harder versions of those dungeons (heroics/HMs) traditionally are not terrifically difficult, and the same normally goes with Raids (aside from the Hardmode versions, which is intended to be challenging for casual players.) This is usually assumed by veteran MMO'ers when a game is launched. Had WoW's 40 man classic raids been only 10m or 25m at launch, even they would have been finished with ease.
It is interesting that you say you focus more on PvE rather than PvP (although you typed that you focused on PvP, but said you were in full Rakata- I'm assuming that's a typo, and you're actually a raider), because perhaps if you tried PvP, you would find more of a challenge there, seeing as you're fighting against actual players and not bosses with their predictable mechanics. (Which, I might add while on the subject matter -- WoW did not even have PvP at launch.) You could also try playing a healer at 50 if you do not already; they harbor more challenges over DPS and tanks.
Either way, I hope you understand that there will always be players at either end of the spectrum; the "hardcore", or those who focus mainly on getting to end-game content like yourself, and the extremely casual, who may only have an hour or so to play each day. The former would get through content quickly, the latter would more slowly. Bioware is just trying their best to make their game have a something for everyone to enjoy, and to allow as many people as possible to see as much of the game they can.
On a side note; can't wait for 1.2! ;)

This is the new flashpoint for the rakgoul story line. I've posted guides on the bosses pages for anyone looking for help. The encounters in this place in terms of difficulty are:
Normal Mode>= HM False Emperor
Hard Mode>= HM Karagga's Palace
Some group compositions will have it easier than others, but any group can do it given the time and skill. Normal mode drops gear on par with Tionese while Hard Mode drops Columi tokens, with the final boss dropping 1xRakata Chest and 1xColumi Main hand. Good luck.
